Getting Started with Your Kamado Joe: Setup, Lighting & First Cook

This beginner’s guide will walk you through the essentials of setting up your Kamado Joe, lighting it properly, and nailing your very first cook.

Step 1: Assembling Your Kamado Joe

Kamado Joe BBQs come with a reputation for premium build quality—and that includes their packaging and assembly. Here’s what to expect:

  • Unbox carefully: Lay out all components and check your manual.
  • Stand/Cart Assembly: Most models come with a heavy-duty stand or cart. Assemble this first on a flat surface.
  • Ceramic Body: With a second person (they’re heavy!), carefully place the base into the stand.
  • Insert Components: Add the firebox, charcoal grate, fire ring, and Divide & Conquer® grill system. Install the vent cap and thermometer as directed.
  • Check for Alignment: Ensure all parts sit properly and the lid opens smoothly using the Air Lift™ hinge.

Step 2: Lighting Your Kamado Joe

  3. Light the starters, then leave the lid and both top and bottom vents fully open.
  4. Wait 10–15 minutes, until the charcoal is glowing and a light white smoke appears.
  5. Close the lid and adjust the top and bottom vents to dial in your target temperature.

Kamado grills take longer to heat up than gas BBQs, but they hold temperature better and use less fuel.

Step 3: Your First Cook

Start simple! A reverse-seared steak, roast chicken, or grilled vegetables are perfect for your first run.

Ingredients:

  • Bone-in, skin-on chicken thighs

  3. Flip after 6–7 minutes and cook until internal temp hits 75°C.
  4. Rest for a few minutes and serve.

Keep your vents open enough for airflow but closed enough to maintain steady heat. Watch that temp!
